Sunshine, booze, and Patio food!

It blows my mind how we can change so much with the season. Not a month ago I was tangled in blankets, heat cranked, craving nothing more than a nice rich chicken stew and Stanly park ale.
The times have changed my friend, I wanna get my butt outside soak up some sun and feast on somethin crisp and cool.
 I feel more naturally inclined to make healthier choices this time of year. Not because I know Im gonna have half the clothes on, or because i'll be rockin no shirt behind the boat.- But simply because those light, simple fresh ingredients are just the way to go this time of year. I can feel content and satisfied with a salad for a meal just so long as its done right.

 
Im talkin about goat cheese, red onion, crisp greens, walnuts, pumpkin seeds (ya whatever!) and a nice white balsamic vin.

The time of year the Sun likes to hang around a little longer, and something changes about the smell in the air. Its spring and I'm hungry for some outdoor food.

On Sunday March 24th from 11-2pm  I had a great time at the book signing at Sherwood park Chapters. A big thank you! to everyone who came out and supported. I must have signed 80 books!

Black N Yellow whaaa?!

Black Beans and Banana can be the best of friends if you give them the right room to play in- So then this soup must be some kinda mega jungle gym!

Start your soup with onion, fennel and a splash of sambucca to  get this party going and gradually add and puree your beans.
This soup was used in my latest dinner party, and to match the theme and tone of the menu I added a fresh halved vanilla bean to the broth in the last simmering minutes. A beauty smooth velvet finish on a bangin soup.

Super fun to eat and easy on the eyes, paired with a bacon wrapped braised sirloin steak.

Vanilla bean poached Brandy snapped Peach

This One was created for all you gluten free's, lactose intorerances, and dairy allergies out there.

Check it out, cause this one is gonna sing to you!
A fresh peach poached in white wine citrus bouillon with a freshly scraped vanilla bean.
Paired with  brandy snap and a maple oat crumble.
Prior to plating, boil a little of your poaching liquid into a syrup and toss in your peaches for that last magic coat.

Capped with an orange soy sorbet- for sh!ts and giggles.

Prawn Paradise from my latest Dinner party.

This one puts me at the beach somewhere tropical. We got citrus poached shrimp medallions, grilled eggplant and zucchini over a crispy wonton with mango hollandaise served with creamy coconut rice.
Super smooth and sweet, definite lady pleaser!
